You can get a 30 minutes break after 6 hrs work. Why nobody takes this break on 8 hr shift?

I work in a busy kitchen as a KP. Nobody mentions anything about this sort of break entitlement. I will ask the Head Chef next time.

Kitchen staff are very busy. However, this doesn't mean that nobody should take a break.

At my job you must take a 30 minute break if you are going to work for more than six hours.

They probably would rather work on the clock than take breaks off it.

Those type of laws are usually state specific. If asked for, the employer must grant it. Some employers force it to make sure employees don't claim they were told they weren't allowed to have it. That said, it would extent your day and some people just want to work through and get home.
