Is brown rice undercooked if it is slightly hard/crunchy in texture?
If so will it make you ill?

brown rice is exactly like white rice: if its crunchy its not done.

It's rice...the worst that can happen is you will be constipated or have some diarrhea due to indigestion depending on how much of it you eat.
Rice should be soft, just slightly chewy, but definitely not hard or crunchy, that means it's undercooked... or badly overcooked if all the boiled water has evaporated from it.

Yes, its under cooked if its hard/crunchy, it may give you indigestion.

If it is slightly hard or crunchy, it is undercooked. Brown rice should be chewy though.

Yes, it is under-cooked when slightly hard or crunchy. Eating slightly under-cooked rice won't make you sick

It's under-cooked and will give you indigestion, but sometimes brown rice contains a few little shells by mistake, which are hard. When cooking it, measure the dry rice first, add 2 and one-half times that amount as water, be sure to flavor with salt and spices, bring to a boil, leave 15 minutes, then simmer on very low heat for another 45 minutes.

Yes it does sound like its undercooked, you may not fully digest the crunchy bits but it won't harm you.
