"To lay down", what does it mean in this case:?
"I'll just cope with my provisions from now until the day they lay me down."
Is that mean "to kill" or maybe "to leave"?

'They' refers to the people that will bury this person when they are dead.

It means to die. When you do the undertaker 'lays you out' to prepare for the funeral. Basically they prepare you for the funeraland dress you in the shroud and then you lay on a slab before being placed in the coffin.

lay me down in the grave. It refers to what happens to most of us when we have died. Others don't just leave us where we died, they move us somewhere and lay us down for the rest of time. We are beyond doing anything for ourselves, after all.

Almost certainly it means 'until the day I die'. When we die, we 'lay ourselves down'. There is no reason why it should mean being killed.

Bury
As in laying out a corpse for a funeral. So while it might mean "to kill" it might also just mean "die."

"Until the day they lay me down" means "until my death" (when someone makes my body ready to be buried).
