    I'm not sure what you mean by properties?

    You could say the merigue has to be fluffy. It's egg whites with air beaten into them.

    The Lemon filling must be thick and sweet and sour tasting.

    The pie crust should be soft and flaky.

    One thing I don't recall ever making. But I think the filling is basically a sweet firm custard with lemon. If I was going to make one I would probably use shortcrust pastry. Egg whites on top of course.
