It is not the sauce you put on after.. It is what you cook it IN and HOW you cook it.

Lamb shanks need to be braised/stewed. So whatever you cook them essentially becomes your sauce. I've posted this recipe here before - it's drop dead amazing...

Red wine sauce. That or possibly mint jelly.
