Sure you can. There isn't any law that prevents them from firing anyone for any reason. Whether the former employee has a valid legal claim for compensation is a different question.

You can be fired for any reason unless you work under a contract that says they can’t. Good news is, you can quit anytime you choose.

Yes. You cannot use violence except to defend yourself from an attack on your person, not an attack on your property. And that's as far as the legality goes. The customer can be charged with attempted theft, but you can be charged with assault and battery. The business doesn't need a reason to fire you if you are in an at-will state unless you have a union to fight for you, and if you are not in an at-will state, assaulting a person on the job is just cause for termination.

Can you? Yes. Do you have recourse if you did, perhaps, and if you were injured in the event, possibly even just psychologically, if requires mental health treatment, then you may have grounds for filing a workers compensation claim but other than that, would have to consult your state's local labor laws.
