Since gettig a Windows account it has taken-over my computer. How do I use my computer without going thru Windows account?

Hey there! You might actually be referring to a Microsoft account - does logging in require an e-mail and password? If so, that's a Microsoft account. Good news, though! You can use what is referred to as a "local account," instead. Local accounts can still be password protected (or not). They are slightly more limited than a Microsoft account, but the limitations lie within syncing your data across multiple devices and cloud storage. If this isn't a concern for you, a local account should be fine.

Well Windows is an operating system meaning once it is on your computer, everything you do on that computer is being displayed to you by Windows. Theres no way around using a windows account if you have a windows operating system.
