What do truffles smell like ?

As a chef I worked with the many type there are from black summer and winter, white, whole, fresh, frozen, tinned pastes, oils and even juice from the black truffle, and from France, Italy, US, China and Syria (not the same but call desert truffles), they can have a musty, earthy wet hay or mouldy aroma. Alot depends on the type and region there from, but in all they have similar properties, white are not used in cooking but as a garnish on hot foods, black will hold up in cooked dishes as well as on cooked for as a garnish.

you may get people a bit confused with your question , people keep in mind that there are several types of Truffles the ones that you find in the woods and the ones made with chocolate

so to answer your question the truffles from the woods has a light nutty taste to it

They do have an earthy smell, and I agree with the gentleman who said mouldy. There is a distincly moldy odor. Similar in some ways to an aged cheese.
