    The large water loss helps keep the plant cool. Since water has such a high specific specific heat, it's a great way to remove excess heat energy from the plant.

    omg I used to have this repetitive dram when I was a kid, that someone shot my dad in the heart and I ran to him with a gallon sized glass of water. I would have this dream like on a daily basis for years .... but I don't think it would have saved him .... he ended up dying in a fire .. too bad I wasn't there w/ large quantities of water then :(
