What would be a good side dish for a fish cake meal?

    If the fish cakes are salmon do haricorts vertes and parmesan creamed noodles. If the fish cakes are whitefish serve rice pilaf and pickled beets.. Serve with a good pinot grigio for the former, a light chardonnay for the latter.

    Creamed Peas with little onions would be good served over the fish cakes as well as the vegetable. Roasted potatoes, mixed with chopped eggplant, squash chunks,red Bell Peppers, drizzled with Olive Oil, sprinkled with garlic powder, Oregano and a bit of basil. Roast in the oven for about 1 hours, stirring 1/2 way thru the cook process.

    WORLD'S BEST MACARONI SALAD

    1 1/2 lb box of macaroni

    1/2 bunch of green onions - chopped

    1/2 tsp salt (or more to taste)

    1/2 ea. red, orange, green and yellow peppers. total: 2 whole peppers

    2 tsp dijon mustard (generous)

    1 1/2 cups Hellman's Mayonnaise

    celery salt

    Cook Macaroni in salted water. Drain noodles.

    While noodles are still hot, mix in mustard and mayonnaise in large bowl.

    Mixture should be wet, but not creamy. Stir in Onions and peppers and salt. Mix well.

    Taste for salt and mayonnaise content. Add more if needed. Coat top of salad with a sprinkling of celery salt and stir in.

    Cover and refrigerate a few hours to allow onion and pepper flavors to permeate.

    Serve cold.

    Don't forget Ketchup and Tartar Sauce or Cocktail Sauce (depending on preference)

    Chips, peas or baked beans in tomato sauce

    Boiled/mashed potatos and peas

    Or just on a sandwich, whilst hot of course

    Mac & Cheese and a veggie or leafy salad. Potatoes of any kind, mashed, fried, french fries...Corn bread or hush puppies. Jell-O with or without fruit goes well as a side or desert.
