    Agar is a gel prepared from the cell walls of various red algae used in laboratories as a culture medium and in food processing as a thickener and stabilizer. That is the description in Webster's Universal College Dictionary.

    Ingredients: 4 teaspoons agar-agar, powder or 4 tablespoons agar-agar flakes 2 (14 ounce) cans coconut milk 2 cups water 1 teaspoon vanilla 1/2 cup sugar method: 1 Bring water to a boil. 2 Mix agar agar with cold water before adding to boiling water. 3 Mix agar agar solution in boiling water. 4 Let cook for 5 minutes. 5 Add sugar and cook till dissolved. 6 Add coconut milk and vanilla. 7 Cook 5 minutes. 8 Pour in dish and cool in refrigerator. 9 It will form two layer( a clear layer and a white layer).

    Agar Agar is made by extracting it from special types of seaweed. Agar forms a gel structure but unlike gelatin, it is very brittle and not that pleasant unless you have lots of sugar in it. It also needs to be boiled to dissolve it in water and it sets at about 45 Centrigrade (i.e. hot!)

    You can set coconut milk with it no problem. You need to add about 0.7 - 1.0% or so depending how strong your agar is.

    As it sets hot, it will set rapidly and you can eat it while still warm!

    agar agar is generally made from seaweed protein, since gelatin is made from meat protein, agar is used by vegetarians as a form of gelatin. works well with most foods and will even set at room temp. whereas meat protein gelatins need colder temps to set. some acidic fruit will break down the enzymes that causes agar to set so more will be needed. Can be substituted at equal amounts for animal gelatin.

    depends on what you buy. my family's filipino and the agar agar my mom makes is a gelatin type substance. it's really seaweed gelatin.

    there's different forms that you can buy it in too; sold in packages as washed and dried strips or in powdered form.

    Make agar agar and add some Litche (lychee) &youre set! ;D
