STUFFED BAKED POTATOES Ingredients: -Potatoes 4 -Frozen Veggies like peas, carrots, corn or broccoli etc. 1 cup -Ham or Smoked Turkey 2 or 3 slices -Sour Cream 1/4 cup -Whole Milk 1/4 cup -Cheddar or Swiss Cheese 1 cup -Salt -Pepper Take your four potatoes and make two deep slits, one lengthwise and one crosswise on every one. Place all of the potatoes into the oven for about an hour until they feel soft at 350 degrees F. While the potatoes are baking, cook the frozen vegetables according to the directions on the package. Cut the ham into tiny pieces. Take the potatoes out of the oven but leave the oven on. Let them cool. When they are about room temperature, squeeze the potatoes so that the potato flesh begins to burst out of the skin. Scoop out the potato flesh. Put the potato flesh into a bowl. Add the sour cream and milk into the bowl of potato flesh. Stir and mash the potato mixture till smooth. Stir in the cooked veggies, ham and the cheese. Season with salt and pepper. Stuff the actual potatoes with this mixture. Sprinkle the potatoes with some leftover cheese. Place the potatoes back into the oven for about 15 min. until the cheese is bubbly. SPAGHETTI AND MEATBALLS Ingredients: -Garlic 1 clove -Olive Oil 1 tablespoon -Chopped Tomatoes 1 can (28 ounces) -Salt 4 teaspoons -Oregano 1 tablespoon -Tomato Paste 3 tablespoons -Water 1 cup -Ground Beef 1 pound -Large Egg 1 -Crackers 6, crushed -Ground Pepper 1/4 teaspoon -Grated Parmesan Cheese for serving Chop the garlic. Get a saute pan and pour the olive oil on. Add the chopped garlic and stir. Add the tomatoes, 1 teaspoon of the salt, 1 1/2 teaspoons of the oregano, 2 tablespoons of the tomato paste and 1 cup of water into the pan. Stir until simmer. Partially cover the pan with the lid and reduce the heat. In a bowl, combine the ground beef, egg, crushed crackers, 1 teaspoon of the salt, the remaining oregano, the pepper, and the remaining 1 tablespoon tomato paste. Mix and squeeze the mixture until smooth using your hands. Shape the meatballs. Turn up the heat in the pan. Using tongs or a spoon, place meatballs into the sauce and cook gently for about 10 min. Cook the spaghetti as the directions on the package. Add two teaspoons salt. Let the spaghetti drain. Toss with sauce. Serve. Enjoy!!!
