• How to season a rolled steel griddle?

    I have a serious cooking gadget habit, and just bought a 36" flat top griddle. I tried to season it with olive oil, and got the top center to 525°, but the edges didn't color at all. Will a heating torch or some other method help me get the whole top the same color? Its too big to fit in my oven like a cast iron skillet. It pretty much... show more

About a third pound of really good beef, fully dressed with fries to die for. An espresso and a Macaron for dessert, it was a great meal. A little over 20euro for two, but... show more
    Last week my wife convinced me to eat at McDonald's. I ate a Big Tasty at McDonald's in Vincennes, France. It's one of the best hamburgers I've ever had. The one a few blocks away in Florida serves crap.

    I've been using an Instant Pot for a few months, and found this recipe for Kalua Pig. It's really simple, and cooks for 90 minutes instead of 8 or 10 hours. Anyway. The dish was done and I had to try it, so I cut two thin slices of Italian Bread, loaded it up with pulled pork, and ate it like a French Dip with the sauce in the pot. HEAVEN!... show more

    Some time ago I saw a post about using sweetened condensed milk to make Dulce de Leche. I put it in an electric pressure cooker, let it go for 40 minutes of pressure cooking and it was wonderful. A really great caramel sauce. Recently while trolling a freight salvage store for LED light bulbs, I came across some cashew butter. Kind of thin, lots of fat, but a unique and memorable taste. This set me to imagining a dessert sauce of caramel cashew, mixing the two together (and maybe salted). So when I do this, what would I sauce with it? I know vanilla ice cream would work, but what about pumpkin or apple pie? Custards or bread pudding? Please help me set up a tasting to see what this would complement.
