It depends what you mean by "stable." If you mean safe, democratic and unlikely to engage in civil war South Africa, Botswana, Namibia, Morocco. Others such as Togo, Gambia, Gabon, Uganda, Libya and Burkina Faso haven't had a change of government for a good few years, so could be described as stable, but their democracy is questionable at best.
