Now there's a challenge! You can get North of London by Thameslink or the service through Kensington Olympia (from Eastbourne change at East Croydon) but that doesn't take you East. In theory you could do it using the North London line or the Docklands Light Railway, but you're more likely to get lost than using the Underground.

Take the train from Eastbourne to Victoria, and go into the Underground Station. Walk past the first set of ticket barriers for the Victoria Line and on to the ones for District and Circle Lines. Go to your left after the ticket barrier and down the steps for the Eastbound platform. Any train will take you to Tower Hill and Fenchurch Street Station is a short signposted walk from there. It takes about 15 minutes including the walk at each end. From there you catch a train to Chafford Hundred (destination, Southend Central - don't doze off!)

PS - The District Line isn't very far underground. It runs just beneath the street and most of the stations are partly in the open. That's because it originally had steam trains.

Why Lakeside? Bluewater, across the river in Kent, is much the same, and you can get a bus(hourly)to Lakeside if you need to, from there. Alternatively, you only need one underground train: District Line Eastbound - (destination, Barking, Dagenham East, or Upminster) from Victoria to Tower Hill(short walk to Fenchurch St. Station), or you could continue on the District Line to Barking or Upminster, to get the train to Chafford Hundred.
