These are on opposite sides of the country, but I've stayed at both and enjoyed them both, each of these are all inclusive resorts.

I've stayed here in Cabo San Lucas http://www.dreamsresorts.com/drelc/index…
Soooo nice, luxurious rooms, high speed elevators, big fountain in the main pool, yummy smelling incense burning everywhere throughout the huge open lobby. Great food!! Only downside is you can't go into the ocean, as there is a huge undertow. The land here is desert like with cactus and very dry air.

I've also stayed here in Playa del carmen, playacar( 10 minutes away from the town, private, quieter ) http://www.sandoshotels.com/en/playa-del…
The water is beautiful and sutable for swimming. I stay in the haciendas (detached from the main hotel) which are a 5 minute walk away from the main lobby/pools/restruants. The rooms aren't as fancy schmancy as the Dreams hotel, but they work. That's made up for with the good drinks/food and excellent service. They are private little buildings with 10 suites. Each Hacienda has it's own outdoor pool also. The land here is rainforest and very humid and green.
