East coast of Australia - short tour?

Hubby and I are travelling to Australia in February to attend a wedding south of Sydney. After the wedding we intend to travel up to Newcastle to visit relatives for a day and then have about 4 days to explore before we return to Sydney for our flight to Bangkok (for Phuket). We haven't been to this area before and would be grateful for any ideas as to where to go. We are hiring a car and stay overnight in B&Bs along the way. We are staying at Sydney Airport hotel before we fly to Thailand so we have built that contingency into the trip.

Any advice would be gratefully received (we have been to Australia before)

We have been to the Blue Mountains but have talked about going again cos it was sooo beautiful.

As you intend visiting the Newcastle area , how about spending some time sampling the hospitality at the Hunter Valley Wineries...then it's just a short trip back to Sydney ...
