Going from personal experience, I always fly with Ryanair and always fly into Stansted.

There is a train station at the airport making regular trips into London.

I checked with Skyscanner and the cheapest flights they brought up were with Ryanair. You are looking at around €125.06 return for both of you (The dates I used were departing on 03/07 and returning on 05/07)

In terms of hotels, I have only stayed in one in London, and can recommend it: http://www.nh-hotels.com/nh/en/hotels/un…

Ryanair & Aer Lingus both fly out of Shannon

Aer Lingus flies to Heathrow which is on the Underground & you can ride it straight into the centre of London but it only does two flights a day & not necessarily at the most convenient times

Ryanair flies to Stansted & Gatwick - both airports are outside of London so you'll have to pay for train fares & Underground fares

I usually travel by Ryanair because it's more convenient but the costs of flights with Ryanair depend on what times & days you fly, whether or not you want to take baggage & put it in the hold, priority boarding etc. The cheapest days tend to be during the week, Tues, Wed, Thurs & if you can pare down the extras (no baggage in the hold, no priority boarding).

check out skyscanner.net and pick your airports. It will bring back all the airlines that fly from that route and prices.
