You can walk up to Rishton village (or take the bus or a taxi), it's only about a mile from the hotel. It's a nice little town with a busy high street, not much to see in particular but the Auberge restaurant is one of the nicest eateries in the whole area. We had a delicious 3-course Sunday lunch there for £9.50.

Heading east, in Padiham you've got a National Trust property, Gawthorpe Hall.

To the north you should pop into Whalley and Clitheroe. Clitheroe is a great market town with a hilltop castle, park and gardens. Whalley is a lovely village below a hill and next to a river with a ruined abbey worth visiting. There is a fantastic country pub as you head north out of Whalley towards Great Mitton called the Three Fishes - book ahead if you plan on dining here, it's a popular and proper gourmet experience.

From there it's not much further to the grounds of Stonyhurst (a Catholic school, but the public are welcome to explore the park and chapel), the nice village of Hurst Green and the Roman museum and relics in Ribchester.

Accrington has a nice art gallery in a grand stone building set in parkland to the south of the town, the Haworth Art Gallery.

There is lots to explore around Pendle Hill (you can climb it if you feel energetic) plus it's surrounded by gorgeous little villages, many with Pendle Witch connections, like Downham and Sabden and Newchurch.

Just a few ideas - my mum in law lives in Rishton so we have been exploring much of the area.
