Peel and chop apples, put them in a pan add a little water and leave them on a medium/low heat, keep an eye on them so the pan does not boil dry.
If you are stewing apples to make a pie mix both cooking and eating apples and throw in some sugar and some cinnamon.

    APPLE STEW

3 apples, peeled & cut into sm. pieces
    About 1 lb. stew meat
    1 can beef stock
    Carrots, peeled & sliced
    Potatoes, peeled & quartered
    1 sm. onion, chopped
3 slices of bacon cut into 1" pieces

In a deep pot fry bacon and remove to paper towel. Keep small amount of bacon grease and brown stew meat on all sides. Add can of beef stock plus 1/2 can water. Add chopped onion. Add apples cut into small pieces. Simmer until pieces of apple have almost dissolved. Add carrots. Add potatoes. Add bacon pieces. Continue to cook on low heat until stew meat is tender.

Optional: The last 20-30 minutes of cooking, you can add cabbage cut in quarters and kielbasa cut into inch pieces.

The apples are the key because they make the stew sweet. The consistency of the stew broth will be thin. Add more water as needed. You can add other vegetables if you want, but never forget the apples!
