How do you sort 'The wheat from the chaff'?

What exactly do You do; too get the best?

It depends on the type of grain you are looking for! For a strong grain that will work well with other seeds, say in a granary loaf, i would set it a task and see how it performed - was it a team player? If a rugged individual leader type grain was required for a strong bread dough, then giving it a bakery to run for a short period of time would test whether it could rise to the challenge. On the other hand if i needed a grain with a soft touch, for a victoria sponge, i would look at how it does with children - does it taste nice with jam?
I think that answers all your questions in one - a bit like a hovis white bread all the goodness and none of the bits.

I use a flail in all examples

Literally, you toss them in the air, the chaff is blown away whilst the wheat falls back down.......

you take the mixture of wheat and chaff, and throw it in the air repeatedly.

The chaff is lighter and is caught by the wind.

The wheat is then caught.
