It depends on the type of grain you are looking for! For a strong grain that will work well with other seeds, say in a granary loaf, i would set it a task and see how it performed - was it a team player? If a rugged individual leader type grain was required for a strong bread dough, then giving it a bakery to run for a short period of time would test whether it could rise to the challenge. On the other hand if i needed a grain with a soft touch, for a victoria sponge, i would look at how it does with children - does it taste nice with jam?
I think that answers all your questions in one - a bit like a hovis white bread all the goodness and none of the bits.
